Gluten Free Diet Choices

Many of us have heard about the gluten-free diet, but do we really understand what it’s all about?  Is it really as restrictive as people believe? Do you have to give up all your favorite foods? Let’s explore the real truth of the gluten-free lifestyle . . .

First off, you may be wondering “What is gluten?”—great question! Gluten is a protein composite found in wheat and related grains. Many of us can eat this component and have no problems; however, a growing number of people aren’t as lucky. These people are likely to be experiencing celiac disease, which develops when ingestion of gluten causes inflammation in the small intestine. A gluten-free diet is recommended for these folks to help control the signs and symptoms of the disease, as well as prevent complications from it.
